- Thai red curry paste 5-6 tbsp
- Garlic 2 cloves (minced)
- Fresh ginger 2 tsp (finely grated)
- Lemongrass paste 2 tsp
- Vegetable oil 3 tbsp
- Chicken Broth 1 cup
- Coconut Milk 400 ml
- Lime Leaves 6 Leaves
- Sugar 1 tbsp
- Fish Sauce 2 tsp
- Chicken Thighs 350 gram (cut thick slices)
- Butternut Squash 150 grams
- Green Beans 120 grams (cut into small)
- Thai basil Leaves 10 leaves
For Garnishing
- Fresh red chilies as per need (cut into slices)
- Fresh Coriander as per need
Cooking Instructions
- First, take a heavy-bottomed skillet and heat the oil over medium heat.
- Next, add Thai Red Curry to the skillet and cook for 2 to 3 minutes, or until it begins to dry.
- Now, add the chicken broth to the Thai Red Curry paste and thoroughly mix it in.
- Allow it to quickly simmer for 3-4 minutes, or until it has reduced to half the original quantity.
- Then add the lime leaves, fish sauce, sugar, and coconut milk. Stir it thoroughly once more, then add the chicken.
- Spread the chicken in the liquid and allow it to simmer, then reduce the heat to medium.
- Let the chicken simmer in the liquid for about 10 minutes on medium heat, then check if the chicken is done.
- When the chicken is done, adjust the consistency of the sauce to your preference.
- If you want the sauce to be saltier, add a little more fish sauce; if you want it to be sugary, add a little more sugar.
- Now, add the beans and pumpkin and cook until the pumpkin is tender.
